I never tried artichokes and thought they had some decent nutitional value. I bought a jarred olive salad ( I love olives) and added quartered artichoke hearts. It was okay but the artichokes were kind of bitter.
I get some great olive salads at a local restaurant salad bar. Its got black olives, cherry tomatoes, onions, peppers( red and green and the yellow), mushrooms. I'd like something like that to go with a pasta dinner. I buy a mild jarred gardinera salad, basically pickled cauliflower, carrots and peppers.
So what do I do to try to use the artichokes or to make an olive veggie salad?
