Was out finishing up my grandkids gift shopping yesterday so I made something quick and simple when we got home--chipped beef on toast. One of my childhood favorites!
DH is making country style ribs with saurkraut and red potatoes in the dutch oven for dinner tonight.

We've got some pasta and sauce left over, so now I'm defrosting a couple of flattened chicken breasts. I'll bread 'em and bake 'em and melt some cheese on top of 'em... and then throw them on the pasta with the sauce poured over it all.

I bought a ham the butcher cut in 1/2 for me so I could freeze 1/2 and cook 1/2 and use the bone for soup.
So I just made 2 egg with cheese, scallion & ham scamble with a piece of italian bread toast.
Yummy!

Another one tonite from my Southern Cookbook: Deluxe Chicken Casserole.

I had a similar recipe to this, but this one added hard-boiled eggs, potato chips, walnuts and 1/4 tsp of red pepper. Wow! Just that little red pepper transformed this dish into some delicious snap, crackle & pop!

Why did it have to be that good!!! This cookbook is going to be the death of me!

Garlic-parmesan mashed red potatoes, sauteed cabbage for me, corn for Lizzy, and ham to help clean out the leftovers....

Roadkill stew!

I've, sometimes, gathered up roadkill, driving around the city, dead birds, cats, dogs, pigeons, squirrels, put it all in a gigantic stockpot, simmered it all for a couple days with some onions, garlic and jalapeno peppers. Good with garlic bread! Yummy!

Thanks ! Oh for a change we used a deli sliced Pastrami instead of corn beef. Oh man great stuff. That soup sounds great too!! ^^
