Yesterday for Turkey-Day we decided to have a duck that had been sitting in our freezer for a couple of months.

I cooked that baby for 4 hours at 350 degrees and it was absolutely INCREDIBLE. I am really looking forward to the leftovers because there is only one thing better than hot duck and that's COLD DUCK. YUM

I did stuffed duck as well. But also did home-made ravioli & lots of meat in the italian red gravy/sauce. Good thing, as I thought there'd be 3 of us and ther was 7.
Plenty of food for all, but no leftovers. And the additional people had never had duck and loved it!

I do have a fresh, that I froze, turkey breast I'll make on Sunday with all the fixings though.
(Gotta have a turkey sandwich on thin sliced, triple decker, jewish rye with russian dressing, coleslaw and swiss.)

Last duck I had was a drake Mallard I shot out of the air myself.. Yeah it was good...
