For dinner I made up a concoction that tasted pretty good really. I cooked seasoned ground beef and drained it. I added it to refried beans and salsa and then cooked it with cheddar cheese on top that melted.

Marinated some chicken thighs this afternoon. Buttermilk and spices. Coated with flours and spices and fried that in 3/4-inch of oil until browned on both sides. Finished off in a 400-degree oven for about 15 minutes. Crispy and crunchy on the outside, moist and tender on the inside. Mmmm! Sides were buttered green beans and mashed potatoes and gravy.
