this afternoon at my bridge group the hostess brought several snacks but one that was awesome: sandwhich filler, egg salad with a twist: nuts, a little curry, more mustard than mayo and a little dill. It was one of the best I have ever tasted. I just couldn't stop eating it.

I'm a meat eater so the best two sandwich fillers I like are really good smoke ham and very thin sliced beef brisket stacked high.

My favorite chicken salad by far involves shredding up leftover roast chicken, and adding it to a mixture of mayo, spicy curry powder, and chopped almonds. This filling is good in a grilled panini, too.

Another tasty sandwich that's super easy is a split bagel, spread with spicy brown mustard, with thinly sliced black forest ham, a thin slice of really ripe tomato, and a slice of mozzarella cheese, broiled open-faced in a toaster oven until the cheese is bubbly.

My favorite chicken salad is leftover grilled or roasted chicken, mayo, celery, dried cranberries, cashews and thyme.

I make mine about the same but use terragon instead of thyme and throw in some dill. You know so many people use nothing but chicken breast now because they are less fattening, but I read an artcle this morning that said the calorie and and fat count is so little difference and the dark meat has more nutrients so if anyone wants to use dark as well as light, don't feel too guilty. I have to admit I love dark meat or a mixture. Of course I love chicken period.

I had the most delicious sandwich a Nordstrom Bistro yesterday. Fresh roasted turkey breast, the "real" thing, lettuce, tomato, swiss, cranberry, mayo, on a whole grain ciabbatta, and they make this sauce with olives--yum!

Sounds plain and simple? It was SO good!

Thanks for the idea! I have some tarragon I need to use up. I was think of tuna salad with tarragon too.

My latest Better Homes & Gardens has several yummy recipes in it (I love summertime, with all the grilling and fresh produce!), and there's a pulled pork sandwich with ham on top. I don't know how I feel about this.
