You could make:

1. Strudel...apple, pears, cherries would work.
2. Spanakopita...sine feta cheese and spinach.
3. Baklava and it's variations...nuts (walnuts, almonds, pistachios), honey or syrup.
4. Börek...various vegetable and/or meat fillings in the dough, including spinach, onions, leeks, garlic, eggplant, lamb, chicken, beef, etc.
5. Patatopita...potato filling
6. Burekas...filled with cheese
7. As a simple dessert or snack...warm with honey drizzled over the top or with some powdered sugar on top and maybe some cardamom.

Wrap dough around small squares of dark chocolate and sprinkle with sugar, good little tidbits with after dinner coffee.

We were just talking about cabbage strudel on another thread (about German food). It is one of my favorite ways to eat phyllo. You can make something similar using puff pastry as well.

Sour cherries, ricotta cheese, and crushed almond cookies make a great phyllo filling.

Typical greek filling for phyllo dough: called Spanikopita (just made it last night YUM!)

Feta cheese
Fresh spinach, wilted in olive oil in skillet with garlic and chopped green onions
1 egg, beaten, and ricotta cheese for texture

Mix filling, spread on layers of phyllo dough brushed w/olive oil, bake at 350 for 45 min. or so...

AWESOME!!

If phyllo dough isn't available, which here in rural Alaska it usually isn't, I use puff pastry sheets and they work great.

Sounds perfect, Alaskagrl. Sometimes, I like to add a little dill to the spinach, but the rest of the family could do without it. Thanks for sharing your recipe.

Typically, the Spanikopita are folded flag style in triangles, but it is so easy to whip up if you lay it in a baking dish and layer it like lasagna. You can put it together in 20 minutes and pop it in the oven.

This makes a great light dinner with a chicken rice soup with lemon. Delish!!

baklava is my favorite, and I myself fill it with a 3:1 ratio of walnuts to almonds.

I also love to fill triangles with:
A.) ground beef, tomatoes onion garlic salt pepper, sauteed first (how do you spell sauteed?) or
B.) spinach, garlic and feta cheese.

I can hardly make baklava anymore-- I am the only one who eats it in the house. I walk by, have a piece, and do this all day. (actually i have it for breakfast in the morning with tea, first), anyway this walking-by-stealing-a-piece thing goes on all day and before you know it i've had ten pieces. the only time i cant eat it is at night (I guess even I have my limits)
Just so you know, homemade baklava is usually better than any you find in a store, unless they are making it ON THE PREMISES.

Half the baklava around here comes from canada???
