Besides Spanakopita, I use Fillo dough for cheese triangles as an appetizer, and apple filling for a dessert.
I love the apple triangles after I take them out of the oven I spray them with rose water and when they are cool I dust with confectioner sugar.
I made garlic chicken triangles for a party and they were a success.
I make them a day ahead, the fillo gets soft, people don't like them crunchy, few said they feel as they are eating paper.
Someone suggested making cups. Well I double checked the freezer section and you can actually buy phyllo already frozen in cups. Maybe to soem that's cheating, but I was picturing them with chocolate pudding, but didn't get them anyway. Maybe next time.
1. Strudel...apple, pears, cherries would work.
2. Spanakopita...sine feta cheese and spinach.
3. Baklava and it's variations...nuts (walnuts, almonds, pistachios), honey or syrup.
4. Börek...various vegetable and/or meat fillings in the dough, including spinach, onions, leeks, garlic, eggplant, lamb, chicken, beef, etc.
5. Patatopita...potato filling
6. Burekas...filled with cheese
7. As a simple dessert or snack...warm with honey drizzled over the top or with some powdered sugar on top and maybe some cardamom.
Burekas can be filled with not only cheese. There are also potato burekas as well mushroom burekas.
The Yemenite Jews have a food called Malawach which is made from Phyllo dough and served with a tomato dip and hard boiled egges.
