I bought my first bag of King Arthur recently when the store didn't have the Gold Medal (UB/AP) I usually buy.
The KA costs about 50% more and is indeed lighter and "fluffier".

Can't say though that the finished product is appreciably different.

My cousin's husband is a former chef, and he recommended KA flour to us. My husband is the baker and loves it. I have about five different kinds of KA flour in my house, LOL.

It's more expensive than Gold Medal, Pillsbury or the generic brands, but it's not bad if you buy it somewhere other than a regular supermarket. At Jewel, KA all-purpose is over $5, but it's about $3.50 at Meijer. Target's a little more, but their selection is limited. They might not carry the pastry flour, cake flour, whole-wheat, unbleached white ...

Well, it didn't turn out that good. It baked well on the outside, but half the loaf was hallow on the inside. Oh well...trial and error!

My sourdough starter is ready and now it is mixing into a nice ball in the machine as I type. Nothing beats a good sourdough!

KAF has a great texture and works beautifully on my homemade breads/pastries.
However, when compared to another good quality flour - like KAF itself - the final result is not much different, imo.

My mother and now I swear by it. We use it as cake flour primarily, but I want to bread some chicken in it one day. In the NY area just around NYC, mass market flour is $2.99. KAF was $3.99. We decided to try it. Our cakes won special praise from relatives, and we ourselves noticed a more delicate texture and a far richer flavor. I'll never go back to more mass-market flours. Even with the premium on the flour, you're still escaping for much cheaper than buying already prepared (especially in my area where cakes begin at $15 from a bakery).
