The wife of a colleague was seriously injured in an auto accident, leaving said colleague temporarily in charge of running the house and caring for their three children ages 3, 4 and 7. (Fortunately, wife will recover, but she's still in the hospital.)

A number of us have decided to take turns making/delivering dinner for the family, so that's one thing the husband doesn't have to worry about.

I signed up for a night next week, but I haven't cooked for a *family* for a long time, and would love some suggestions. The dad says there are no dietary restrictions, and they're grateful for whatever we bring, so it doesn't have to be fancy. Other people have already said they're bringing chicken & rice, chicken & something else, spaghetti, and casserole of some kind.

I'm vegetarian, but the meal doesn't have to be (after all, aren't they suffering enough? ) -- but if the main course has meat in it, I'd prefer to not have to touch it too much. Yeah, I'm a squeamish wimp.

I'm fine with salad and dessert, but really could use ideas for a quick and easy, heat 'n eat main course different from what the others are bringing.

Sooooooooo -- suggestions, anyone?

What about fixings for vegetarian tacos/burritos? Super easy to reheat cooked rice and a bowl of refried beans. Then you can also provide shredded cheese, shredded lettuce, maybe some diced tomato, a container of sour cream and pack of tacos. Kids usually love making tacos. Or, make it into an enchilada casserole that they just pop in the oven, heat and eat. Some recipes for Mexican lasagne have corn or other veggies in it too.

Sloppy joes are another easy one but you might want to suggest that for another volunteer.

Ooooh -- I like the taco idea, 'cause kids do like to put those together. Thanks!

Still open to any other suggestions.

^^^ add to that any kind of wraps ( you can use leftovers ) - but not sure if 3 and 4 year old will enjoy it;
simple, meatless spaghetti, pasta salad or macaroni & cheese + salad,
baked potato with all the goodies, vegan pizza or lasagna, meatloaf, apple pancakes, veggie fritters, fruit smoothie, grilled cheese sandwiches and fruit salad ...

It all depends, but at that age, simple was better. My kids liked mashed sweet potatoes, chicken legs, green beans, and oh...make them some dessert...for a treat...chocolate cake, no frosting.

If you don't want to touch meat, or make meat, a dinner of hashbrown casserole with eggs and cheese would work. Or pancakes and oranges.

how about rice with a fried egg and corn
macaroni and cheese plain or with vienna sauages that u just put in a bowl and heat up and add to macaroni
spagetti and beatball in the can already done with steam veggies
stuff like these kids love and dont mind eating a lot.

If you have a Costco nearby get them , Pizzas, frozen Lasagna, Fresh Rotisserie Chickens, Lots of fresh frozen and prepared food that can be heated and served. Also lots of fresh fruits, veggies and snack foods. Instead of killing yourself making a meal go to Costco and then offer to drive the kids to school, practices etc..

Pot Roast- Get a beef roast- cut up some veggies a can of beef broth- seasoning (pot roast packet from store if you like to take the quess work out) put it in your slow cooker (with a plastic wrap liner) cook for 6-8 hrs and then take the entire slow cooker with some french bread and there is dinner.

Warm French cut green beans and sliced ham with seasoning- with almonds.

Hearty veggie soup w veggie broth. Buy a large bag of Great Value mix veggies at Wal Mart - a can or tow of pototes (or fresh skinned red ones) a 16 oz veggie broth. Herbs- combine in a slow cooker for 4-6 hrs- and serve with warm bread.

I'd make them a nice cheese lasagna with fresh herbs and maybe some spinach shredded into the sauce. They won't even miss the meat.
