My husband and I ate out tonight at our favorite Mexican restaurant in Lawton, Oklahoma. (Salas's on Lee Blvd.) I had the Ladies Delight (avocado salad tortilla, cheese tostado, and refried bean tostado), and my husband had his favorite Number Two Combo (enchilada, taco, and refried bean tostado). We had lots of cheese dip, hot salsa, and chips with the meal. It was soooo good. I wish I had two stomachs so I could've eaten double!
well, it is going to be a very interesting meal. Notice I didn't say good, cause I don't know, but interesting: I am taking the left overs from last night, a little mexican rice, beans, a little pork, a little chicken, jalapenos, onions and chieese and make them into a cassarole. We also have just a tab bit of guacamole left so I will make a salad and top it with that plus chips.
BBQ spare ribs, corn on the cob and peach cobbler for dessert.
