Well, yesterday I splurged. I spent the entire day, from 8am to 5:15 with my daughter and we shopped, shopped, shopped. We visited the Butcher shop, which I love, so I purchased 6 huge sea scallops, which we will have tonight and hubby better love every bite: $21.00 worth: no, I do not, normally pay anything like that for any meat or fish, but I have a $25 gift card. This is the time I splurge and buy what I want: when I am not really paying for it..What fun it was. I am having bok choy and I guess a fruit salad with the scallops. I might make a few noodles as well or something like that.

Tonight I am going to to make my mother's hungarian goulsh over egg noodles. I looked at a few receipies and think I have pieced together how she made hers, wish me luck!

Tonight I am going to make a Tuscan Soup with some crusty Italian bread for dipping and a green salad on the side. I'm also making the spanakapitas I've been wanting to make but didn't get to it last night. Kind of an odd combination but what the heck.

Maybe a different combo but sounds delicious! Ummmmmm...spanakapitas ( spinach pie correct?) oh I could go for some good dolmales!

I just taste tested the roast from the slow cooker and I think I'll have to taste test again just to make sure it is going to be just right for supper....heh heh

I think left over beef stew with biscuits. Take out of freezer, place in microwave, push button. Voila.

Pasta with alfredo sauce and shrimp. The alfredo sauce will be homemade, with the basis, onion, garlic, parsley, mushrooms, parmesan, and I am lightening it up a bit with skim instead of cream/half and half. BUT, I'm adding bacon, so I'll balance out the calories/fat I saved through the skim milk, haha. I'll just cook the shrimp with S&P, EVOO, and maybe some garlic, in the same pan I crisped up the bacon. Over whole wheat angel hair for me, the same or penne for DH.

Dinner tonight is a grilled steak salad with a smoked paprika vinaigrette and baked potato. Sweet iced tea to drink.

I have black beans and yellow rice waiting. Now, I did cheat and doctor up canned black beans but they smell so, so good. I added some green onion (white and green parts), fresh diced garlic, paprika, cayenne pepper, diced bacon and a little chicken broth. When serving my beans I use lime wedges, chopped hard boiled egg and a little more diced green onion as garnishes. Along with this is Cuban bread, a salad and steamed broccoli. For dessert vanilla ice cream will be topped with fresh pineapple slowly cooked in some butter, spices, lime juice and brown sugar. This makes a nice syrup type topping to go over the ice cream.
