Haha. I don't know why people think professional chefs are dieticians or nutritionists. AB and PD are TV chefs and authors-not nutritional role models for America.

Bourdain smokes, drinks, swears and he's an ah. Reminds me of someone I know very well. I like that in a guy.

Paula Deen - I ate at her restaurant. Once. Overcooked pasta, overcooked sodden, listless, indistinguishable meats dripping and shiny with grease, everything glopped together, no distinctive flavors. Southern cooking is not that way - I know, I am a southerner and a cook. Flavour is everything, and texture is a big second. I use butter and lard too, but for texture and accent flavour, not to drown the diners, leave permanent greasy stains on the linens, or pool in the serving platters. PS I don't have diabetes, and my cholesterol is low without medication. Moderation in all things...

As for Bourdain - He strikes me as a snob, one of those folks who tries to tell you he's been everywhere and done everything; probably thinks (and tries insistently to convince others) that insects are a delicacy. I've tried to watch him but simply don't have the stomach for him. After 10 minutes, I'd rather switch to a Gordon Ramsay rerun. Ramsay at least has recipes that are light, flavorful, use local produce, and don't overwhelm either the plate or the palate.

I'd like to see the three of them in a cookoff!

Bourdain through and through. After the interview the slam against dean is deserved. She refuses to make the changes in diet that is often first line threatment in type 2 and she would rather medicate.

Bourdain is my hero.

I use butter, however it is not the extent that I drown everything in butter. Nor do I deep fat fry everything. I wan't my food to taste good. Not slide in, slide out or plug most major arteries in my body.

I like Bourdain's rough edges.

Paula Deen makes me crazy with the "y'allllllllllll" that she insists on tacking on to every other sentence. Makes my ears bleed.
