most bread usually has an expiration date less then 7 days when you buy it and it gets moldy, some bread like this "Bakers Inn" that I hvae been buying has an expiration date of like 20 days from when you buy it, why is this? Also, is Expired bread OK to eat if there is no mold on it?

Preservatives.

I only buy fresh baked bread and either eat it that day or freeze it.

You can eat old bread. It won't hurt you.

if you freeze it will it go bad?

If you freeze it, it will stay in the same condition as when you froze it.
I've learned that the breads without the preservatives actually stay fresher longer..so much for the added chemicals. They don't do any body good.

I love the Ezekiel bread too! But always freeze the other, and only buy whole wheat/whole grain.

I started buying bread from our bakery, organic, nothing added. What a taste difference it is!!! YUM!
Good, wholesome bread without additives will not last, and turn stale in a day or two.
Either freeze portions, or dry out unused portions to make bread crumbs.
Fresh, natural bread without preservatives will not last.....hence manufacturers adding coloring and preservatives.

Try using fresh bread for crumbs. They will be slightly moist and large. What a difference it makes! I bake foccacia just for crumbs. They will keep a day or two in the fridge. Otherwise please freeze them.
