I just came across this recipe on the internet and it sounds really good. It looks like Teflon sponsored a contest for the Best Grilled Cheese In America and this was the $10,000 winner in 2004 (6,000 entries) - Caribbean Grill by Ashley Berman. I can't wait to try it...
I would still rather have my grilled cheese from grandma's cast iron skillet....no matter what cheese or salsa used....Just seems more natural than teflon...
I have to laugh when I look back and realize that I did not grow up with a lot of different foods that are given to children: mac and cheese, grilled cheese, mashed potatoes, etc. With that said, I love a good grilled cheese sandwich once in a while! I make mine with butter, either mozzarella or "queso blanco"/"queso de freÃr" (tastes just like the salty "string cheese" that children like to eat as a snack, and it is great for frying - though it is a Latin product it can be found in the cheese section of your local supermarket) and some bacon. Yummm!
Jarlsberg on whole wheat from Whole Foods, grilled with butter in a cast iron skillet, (no teflon for me) my own fresh mango salsa, and some hand cut sweet potato fries, now theres a winner!

Yes! That's just the sort of grilled cheese that I love.
My current favorite is Havarti on whole wheat. Once in a while I'll use Havarti with dill or put a pinch of herb/s on the cheese, maybe just a little freshly ground pepper, perhaps some roasted red pepper strips. I don't make mango salsa but I might have to. It sounds good.
