When my kids were still at home, we had breakfast for dinner at leadt once a week. It was usally the day before grocery shopping.

It consisted of an omelet with peppers and onions, home fried potatoes, grits, and a wonderful ciabatta bread that we toasted. It was terrific.

Of course, the bowl of Chocolate Nutty Moose Tracks ice cream wasn't bad either!

I'm doing the chicken parm for supper....the power of suggestion!

I bought tenders tho they were so much cheaper! I am sure it will work out ok for "home style" cooking!

Cool Recipe for tonight's dinner

I haven't posted in here before but, while surfing around, I saw some familiar names from forums where i hang out, so I asked Auntie Batx if sh would ant to share one of her Italian recipes...and here it is:

RECIPE FOR STUFFED SHELLS

[CENTER][CENTER]iNGREDIENTS [/CENTER][/CENTER]
[CENTER][CENTER]I box large stuffing shells[/CENTER][/CENTER]
[CENTER][CENTER]Basic Italian sauce[/CENTER][/CENTER]
[CENTER][/CENTER]
[CENTER][CENTER]Filling for shells as follows:[/CENTER][/CENTER]
[CENTER][CENTER]32 oz ricotta cheese[/CENTER][/CENTER]
[CENTER][CENTER]½ cup grated Parmesan cheese[/CENTER][/CENTER]
[CENTER][CENTER]1 large egg[/CENTER][/CENTER]
[CENTER][CENTER]1-½ cups shredded pizza cheese (comes in a cheese combo package)[/CENTER][/CENTER]
[CENTER][CENTER]Reserve ½ cup of pizza cheese for later[/CENTER][/CENTER]
[CENTER][CENTER]Mix above ingredients to make the filling[/CENTER][/CENTER]

Cook shells until done trying not to break them during the process. Fill each shell with 1 teaspoon of filling and place in a single layer into a casserole dish. Be sure to spray the dish beforehand to prevent sticking. Spoon your sauce over the shells then sprinkle the reserved ½ cup of pizza cheese and cover with aluminum foil. Bake in a 350 degree oven for 35 minutes. Serve with Italian bread.

Elston you have made me hungry for Chicken Parm. It's one of my favorites and I haven't made it in a long time. So I am going to have to find my recipe and make sure I have all the ingredients I need so I can make it SOON.

I am going to make Baked Cod tonight. I will have a baked sweet potato but will have fry some sweet potatoes for dahubby, he loves them fried.

Yum! Stuffed shells! I like to put some chopped spinach in my ricotta just to have some green in there Tonight is meatlof, smashed potatoes & corn.

How do you fry them? Butter and maple syrup?? Do you slice them like regular fried potatoes?

I have had them fried in tempura batter before, really good like that....

You know what? After having a cheese stick for dinner 2 nights in a row, I think a baked sweet potato may be in order tonight....

I just slice them like I would a regular potato and fry them in a little EVOO and a little butter. I like to mix my olive oil and butter. I usually don't add any brown sugar or anything like that (except on my baked sweet potato). DaHubby is a diabetic so I try to stay away from using to much sugar in anything.
The snickerdoodles last night was a rare treat for him.
