My dinner tonight was sauteed onions, garlic, thyme, and crimini mushrooms in a wine butter sauce (done in about 12 minutes). On the side I ate a buttered piece of French bread, with apple slices and blue cheese for dessert.

Morning golden folks-AmberBaby and BJH so very well deserved!!!

Crisp444 if you drive take a trip to Perth Amboy,NJ-huge Cuban pop. and bakeries,etc.

MWW-agree cooking for one is difficult-thankfully right now I have single servings in freezer.

Sort of a light went on this morning as Mr. L's diet has been fiber-less due to that's what we were advised-so hopefully daily FiberCon will help.

Final fitting tonight and I swear I will NOT answer the phone-LOL.

Nomad thanks for the recipe review it is on my list to get a pork shoulder next trip to the meat market! Did you end up with some good cracklins from the skin?

crisp444 what sets the cuban bread apart from other breads please? I would have to make it around here we are lucky to have Italian and french bread.

cyn any updates on your Sunday family dinners yet?

Last night we hit Subway after the 2 funeral home visits it was a long night getting showers and homework done afterwards.

Tonight I have a luscious top beef roast that has been bathing in the fridge for a day & a half that will be getting cooked slow today. Haven't decided on the sides yet but I did hear something about mashed potatoes and gravy this morning.

Need to go to the basement of C-D to partake in the partying I am sure went on yesterday I hear.

Oh Yes....Gonna make some cornbread with some of them...

Good to know but cracklins don't last long around here to be put in cornbread. Reckon I will have to hide some.

I had about a third of them with my dinner the first night...I could not resist... I want some jalapeno-cracklin cornbread now.
