I'm taking the laptop! Hahahahaha...but I bet you gambling is going to be even better than that cornbread and by process of elimination...... the other things too.

However, if I'm losing, may have to reconsider and since I won't be having this cornbread there.....well, we may just have to go to Plan B!

Forgot to mention what's in the pantry and/or fridge, to help:
Forget what's in the pantry, RDS!! You'll have to run out to the store quick for this never-fails recipe to serve over egg noodles.

4 - 9 Chicken breast halves
1/2 lb. fried, drained and broken bacon (Mom always wrapped the uncooked bacon around the chicken breast. I like to cook the bacon first.)
1 can low-fat condensed cream of chicken soup (I use Campbells', but store brand is fine.)
1 can low-fat condensed cream of celery soup
1 can low-fat condensed cream of mushroom soup
1 can of water
1 small jar or foil pkg. of Dried Beef (I use Armour's), rinsed, drained and torn into pieces.

Place the chicken breast in bottom of Dutch oven, mix the soups and water together, add the bacon and torn dried beef.

Cover with lid and slow bake in the oven at 325° F. for 1 1/2 hrs. Or, place in a crock pot for whatever length of time you usually use for chicken dishes. (My mother would use her crock pot for this dish and it got exceptionally tender - about 6 hrs.)

Serve the breast on a platter with egg noodles and the soup mixture as a sauce for all. Serve with any green vegetable and salad. This makes a wonderful company meal.

gem keeper It sounds delicious and it hits a memory nerve chipped beef with chicken breasts in gravy......sounds wonderful!

Tonight we had steamed soft shell clams; salad; french bread with oil and balsamic vinegar, and to finish it off my DP had rice and green tea and smoked mussels. I am still in steamed clam deprivation and can't have them too often...this is the third time in the past month we had steamed clams.

For desert we had Hood's Maple Walnut Ice Cream. It was delicious and oh so New England! Maple Walnut is to northern NE like pecan praline is to the south! I am a happy man!

(I froze the clam broth for the next time I make a clam chowder. "Waste not want not!")

Good morning all!!

Gem that's awesome-sounds so great and definitely going to make it.

Saved the cornbread casserole-thanx CrazyW.

Here's another easy and great for company chicken dish:

Put boneless chicken breasts in baking dish.
Top each with a whole mushroom cap.
Mix 1 can cream of mushtoom soup, 8 oz. sour cream and 3/4 coup can of sherry.
Pour over breasts making sure all covered.
Sprinkle w/paprika
Bake uncovered 45 min.
Serve with wild rice.

Also you can put asparagus spears or broccoli under chicken breasts.

VP-you are a trip and a half-will miss you while you clean out the casinos.

Elston-all I can say is I'm drooling here. I miss steamed clams and mussels so much.

Oh wow! Thanks crazyworld for finding that cornbread casserole recipe---it's in my files now. Thanks Lasey and gemkeeper for the chicken recipes--also in my files now. With my kids soon to arrive I need to start thinking of larger meals as my family size will more the double for awhile. With the cost of food now I'm hoping to try more casseroles and such. My son has an appetite like a horse!! With his wife being pregnant I want to make good, healthy foods. I am so lucky as thier 5 year old eats just about anything put in front of her--amazing for a child!! It's been years now since I actually had to cook for a family and not just the two of us so this should be interesting!!

Cyn I find it easier cooking for a crowd rather than 2.

Casseroles can be tweaked and stretched. Chicken can be cooked so many ways.

Not much longer and your home will be full!!!

Morning all....painkillers are doing their job and so far I have been able to eat real food. Tonight thanks to cd friends I am having tacos for dinner which I haven't been able to stop thinking about since yesterday. Yum can't wait. Last night made chili mac for the kids (never made it before) it was pretty good. Hopefully it will reheat ok for my son at school.
