Good morning all.

Amber-thank you for that calorie free cyber burger-how good did that look?

Jaxson-isn't it great how a simple thing like that can make us puff up and feel so good.

MWBW-glad you had an evening away from the boredom.

NMS-that sounded so good, Julia Child would be proud.

That cabbage soup sounds like a keeper. Next weekend we'll be back in soup mode as temps plummet again.

Morning, all - happy Tuesday. Hope everyone is warming up from the deep freeze of last week by now, though I hear we're in for another shot again a week hence. Ah well, a few days of above-zero temps are always welcome in January.

Enchilada casserole tonight, or what the spouse calls Mexi-sagna. It's composed of layers of corn tortillas, beans, ground beef and cheese, and is very solid stuff. The daughter's friend and her sig-other are joining us for supper again tonight, and we always try to plan for items that will yield plenty of leftovers that we can send home with them.

Last night I took turkey sausage (not in casings), breaded them in panko, shaped them into meatballs with a ice cream scoop and pan fried them. I then took them and baked them off in the oven with a jar of Trader Joe's Vodka Cream Sauce. When they were almost finished, I topped the meatballs with mozzarella cheese until the cheese was golden brown. I served the meatballs on top of a bed of thin spaghetti with olive oil, butter, garlic and Italian parsley.

Tonight I am planning on making turkey chili with red beans, black beans and corn. It's cold in Atlanta this morning!
