We are getting some good fresh locally grown asparagus in around here, and I already cooked some using a recipe that calls for a butter/parsley sauce. I was impressed with the taste of asparagus, but would like a rec as to herbs to use with Aspargus....any recs as to good cooking herbs or spices that go especially well with Asparagus???
I like my asparagus either grilled or roasted until just done and then simply finished with good olive oil, a squeeze of lemon and salt and pepper. Keep it simple if you have good asparagus. Peel, then slice on the bias into bite-size lengths. Saute a generous amount of sliced garlic in olive oil, then use the oil to stir-fry the asparagus with a little salt.

I grew up in Ca where I think Asparagus must have started (only kidding, but we did have a lot of it) we used to just dip it in mayo, but now, most of us have spread our wings and are trying other ways to fix it: Our favorite is roasting it in the toaster oven for about 10 minutes with a little olive oil, grated garlic and sea salt and fresh lemon. When it is cooked we add lemon zest. another idea is a dill/mayo sauce and a third way, a lime/cilantro topping.
Wow those are some really good ideas for asparagus. I like it grilled with chopped garlic and olive oil with a sprinkle of Italian seasoning. I actually just finished eating some with some ribs and a nice tossed spring salad.
