I made a Garden Bake. A friend dropped over bags of eggplant, tomatoes, zucchini, summer squash and onions. I sliced everything thinly and made a fresh tomato sauce, layered it with mozzarella, and baked for an hour. Served with garlic bread and a cucumber salad.
going to roast 1/2 chicken, the other 1/2 I will simple boil for use later in the week. We are having baked pots and salad with the chicken. A nice simple and tasty dinner and relatively healthy as well, if I could just not top the potatoes without all the unhealthy stuff.
Tonight we have stew meat curry with basmati rice,cucumber raita and lassi. For dessert jello with cut up fruit soaked in wine over night. My guys like that,while I prefer plain jello with vanilla sauce.
I'm only working half a day today, so I'll be home in time to make a small pot of Hungarian Stew,
cabbage and pineapple slaw, wheat rolls, pralines & cream pumpkin cheesecake
red peppers stuffed with savoury rice and the left over pork loin from yesterday. I'm also going to try some quinoa instead of rice to see how it turns out. served with a side of steamed vegetables and fresh hot buttered corn on the cob.
