"Bill miller's is the LUBY's of b.b.q. Here in Texas"

Kind of like "Fred's Fish is the LUBY's of seafood in Texas"

Yeah! Maybe the special artsy folks or other whiners could make some. Sea Island should be on there too.

Bolner's makes it possible for anyone to make great BBQ. Even those in NY City! Like the Pace Picante sauce commercial used to say. Not sure about Austin!

Option 3, however I think any slow cooked meat with BBQ sauce (like in a crock pot) qualifies too.

Really, to me it means stopping for carry out at a BBQ place and picking up a lb. of brisket.

Real BBQ masters are dying off. It's to easy to use a computer controlled "CookShack" VS getting up at 2 AM to start a hickory or oak wood fire. At least they use wood pellets for the heat and smoke.
Cookers for commercial use

Smokers for Competition using just wood.

I still tend my 1/4" steel offset through the night for Fourth of July BBQ - watching the temp and adding lump charcoal and wood chunks.

BTW - someone once asked me if they have "Fourth of July" in England. I told them "Nope, we go straight from the third to the fifth."

Maybe one day I'll get a pig (large propane tank) and mount it on a tandem axle trailer complete with offset. Then that would call for an annual trip to the Ozarks for a load of hickory and oak and some fishing. Now if I can just take enough photos to use it as a business expense. Still need a place to finish off some feeder pigs for whole hog Q's.
