When I was younger, I heard or read that the garnish isn't supposed to be eaten. But, at the same time, why waste food?
I don't eat the green, leafy garnish that sits under some dishes (I'm not talking about parsley or lettuce. Is it kale?). I have eaten the daikon radish, carrots, and fruits that have accompanied Japanese froods I've had. I'll eat parsley. Once, I did try a piece of cherry and pineapple that was cooked along with the ham (won't be doing that again).
I mean, why not? It's almost always food, and why waste food? I especially like parsley, because it's not only very nutritious, but it helps to cleanse the breath.

If it's edible, I eat it. Parsley is kind of strong to me. I've tried it, it just ain't my thing. But I'll squeeze a lemon on a fish slice and eat the squeezed lemon. Or squeeze one in tea and then throw the squeezed lemon in the tea. I have been known to eat tea flavored squeezed lemon when I'm done with my iced tea. At home, not in public.

HAHAHAHA.........can I sit at your table? I completely agree with you and yes I eat the garnish most of the time. If it is cilantro or mushrooms I don't though because I don't like either but my Husband will usually eat those so nothing goes to waste.
I always eat the parsley and some of the other garnish as well. It depends on whether it is under something and completely soaked with a sauce or dressing or if it is sitting on the side. I have never heard it should not be eaten, I have always heard the opposite. I guess, like so many things, it is just a matter of opinion.
