So far 3 or 4 cups of cucumber salad with red onion and a cup of fat free refried beans. Will finish the last 2 cups of cucumber salad with a tomato for dinner.

I can be a silly goose sometimes - I love trying new things (experimenting). So, I had some leftover kosher dill pickle juice. I thought why throw it away - there are enough chemicals (salt, acetic acid ...) in that juice to last for probably a couple of years.
Okay, so I have a cucumber that is on its last legs - sliced it and put it in the juice. Wait about 5 days - yummy! Not as crisp as the pickles were but still had the taste profile.
Okay, so I have some zucchini that I should eat or put back in the frig. Because I had an abundance of zucchini at that time, I decide to try the zucchini in the pickle juice. I tasted one yesterday and the flavor profile is there but I think the zucchini may need several more days to reach the textural profile that I seek.
I had a handful of green beans picked out of the garden for my morning snack. Unfortunately, that's about all I've been getting every 2 weeks. Dunno what went wrong there.
