We are going to have a breakfast potluck at work. I like the idea.. but because it's different from your "normal" lunch potluck. Any suggestions? Things you would like to have at a breakfast potluck? I'm thinking simple things like bagels, muffins, etc but I want to do something homemade.

The Pioneer Woman just did a fruit salad with a sauce of sugar, water, orange juice and orange peel. I would take that.

I second the quiche. Potluck brunches/breakfasts can get mighty bready & sweet mighty fast. Even hard boiled eggs are nice for those who want some protein and don't want yogurt.

Breakfast burritos would be easy to grab & eat you could make up the sausage or bacon the night before then scramble eggs in the morning. Assemble using cheese, onions, salsa wrap them in foil put them in a crock pot or insulated carrier to keep warm.

Make sausage gravy & biscuits in your crock would be easy too. I like the fruit salad idea too or a plate of fresh fruit.

Breakfast casserole can be made the night before then backed in the morning while you're getting ready for work.

If you are feeling frugal, cut them into 1/2's, or 1/3rd's
We had these open faced at a place we were staying. Seriously, after a 1/2 bagel covered with egg, cheese and ham, that was all I needed. The ones we had were open faced, but still, the panini style should be good as well.

I hate it when potluck breakfast turns into a muffin and donut buffet. I need something hearty in the morning, not an icingless cupcake! Therefore, I recommend an egg-based casserole or even a crockpot full of steel cut oatmeal.

Hmmm, maybe some hash? I've made some good Cajun turkey hash with potatoes, onion, pepper and egg. You could bake it too if you wanted.

I made some scrambled eggs, with cheese, and brought salsa for side. Cooked them at home, stuck it in the crock pot, went over very well, no left overs. Simple is sometimes best.
