Favorite is sunny side up or soft scrambled.

For a difference, coddled eggs, scotch eggs, eggs and soldiers (soft), huervos ranchos and of course omeletes.

This summer, I perfected my scrambled egg recipe.

- 2 eggs
- 7g butter
- 14g grated Parmesan
- 1 tablespoon heavy cream
- 1 tablespoon water

Put it all in a pan, put the heat on medium low, constantly whisk. Soon, curds will begin to form on the bottom. Scrape them off as they form, eventually you will get creamy fluffy eggs. I also add additional cheese on top.

Ground flaxseed is slimy when mixed with water and is used as an egg substitute - not for me.

Sunny side up, overcooked by most standards- crispy brown underneath and yolk a bit more well done than runny.

Soft boiled eggs with soldiers. (buttered toast cut into long strips and sprinkled with salt)

Omlettes with cheddar and onions, or cheddar, tomato and parsley, or just mushrooms already chopped and fried.

Egg salad with chives

(mmmm, hungry now.)
