- 2 eggs
- 7g butter
- 14g grated Parmesan
- 1 tablespoon heavy cream
- 1 tablespoon water
Put it all in a pan, put the heat on medium low, constantly whisk. Soon, curds will begin to form on the bottom. Scrape them off as they form, eventually you will get creamy fluffy eggs. I also add additional cheese on top.
I've always hated eggs and like them best when they are made of flaxseed. I've heard you can even fry them but I have never tried it -- because I hate fried eggs!
...When we were little kids growing up my mom made these for us all the time. My mom called them "egg in a hole" and the best part was the fried bread that came out of the hole, frying the little pieces of bread when you tear out the holes!! I have also heard them called everything from a "one eye" to a "bird's nest"...
They're also called "Moonstruck Eggs" because they were featured in the movie Moonstruck.
Sunny side up, overcooked by most standards- crispy brown underneath and yolk a bit more well done than runny.

Omlettes with cheddar and onions, or cheddar, tomato and parsley, or just mushrooms already chopped and fried.
