Drop a little water on the griddle to see if it is hot enough before pouring batter. If the water sizzles or pops the griddle is hot enough, if not let it heat some more.
If you are using pancake mix, add a teaspoon of vanilla flavoring. Immensely improves the taste.
It's not likely that you'd be using HFCS anyway. Most corn syrup sold to individual consumers is just normal regular corn syrup. And most "pancake syrup" is also normal regular corn syrup with either artificial or natural maple flavoring.
Maybe so, I stopped using "pancake syrup" quite a while ago. Like cheap, domestic beer. Life's too short.
If you've ever tapped maple trees and then boiled it down to maple syrup like we did years ago when our kids were younger, you realize why they charge huge prices. Unless it's bought at a maple tree farm, you can't beat home-made on pancakes. We did ours over a big boiler on an open fire that I stoked all day. MMMMmmmmMMM
The best recipe I have found is the Ultimate Pancake recipe on the Bisquick box. They are really good, and I'm not much of a pancake fan. As far as cooking them, the first ones are always cosmetically challenged, but they still taste good.
Make sure you are using a "heavy" pancake pan. I use the griddle my grandmother had and remember the great ones she cooked on it. Also be sure it is heated through before you make your first batch. And turn over "only" once. They are ready to turn when you see the surface covered with small steam holes. The second side doesn't take as long.

I had some friends who have immense physical disabilities, tell me how much they loved pancakes. I was trying to figure out how a person who has limited vision, no range of movements in hands or arms, and in a wheelchair makes pancakes...simple, buy frozen, stick in microwave!
There is a solution to everything, once you open your mind up to all possibilities.
An electric griddle is a foolproof way to make pancakes. I have owned several electric griddles and they worked the same way...set the temperature to 350 before you start mixing the pancake batter, and by the time the batter is mixed, the griddle is hot enough.
This is my current favorite pancake recipe: Fluffy Pancakes Recipe - Allrecipes.com It seems weird with the vinegar, but you don't taste the vinegar at all in the cooked pancakes, and they come out really tall and fluffy.
Steens pure cane syrup will make any pancake a winner in my book.
