Made my eggplant parm a day late (last night ended up as grilled chicken w/salad). I decarbed it by using almond flour mixed with Parmesan cheese & Italian seasoning for the breading.
My favorite local Chinese food, which is fried rice with barbecued pork (I got the last of it, so I was lucky!) and black pepper chicken. Raspberry iced tea to drink.
In order piled up on the plate - quinoa, sauteed kale & garlic, grilled chicken, mushroom & asagio sausages, feta cheese sprinkled on top. Angry Orchard hard cider to drink and caramel ice cream for dessert.
I had brown rice and natto (japanese fermented soy beans).
Ugh I'm so jealous of you guys. Everything sounds so fancy and super delicious.
