I have a couple of overripe tomatoes I'd like to save, if possible, to toss in my next pot of soup stock. How do I save them? They can't be frozen as they are I am guessing.

Could I cook them down in a saucepan, then freeze them in a freezer bag, then when I am ready to make the stock, just dump them in?

I think I just answered my own question , but just in case anyone else has a better idea......

You could also roast 'em and freeze 'em.

Wash them, cut out any bad parts, and the core, and freeze them whole. They'll be mushy, but if you're using them in soups or stews, who cares?

When you want to use them, pull them from the freezer, run them under hot water for a few seconds, and the skins will slip right off.

You can toss them in the freezer as they are. When you thaw them, the skin slips right off. I do this all the time.

Throw them under the broiler. Roasting tomatoes concentrates the flavor wonderfully. They will be eaten almost as fast as you can let them cool down a little.
