I have a couple of overripe tomatoes I'd like to save, if possible, to toss in my next pot of soup stock. How do I save them? They can't be frozen as they are I am guessing.
Could I cook them down in a saucepan, then freeze them in a freezer bag, then when I am ready to make the stock, just dump them in?
I think I just answered my own question , but just in case anyone else has a better idea......

Throw them under the broiler. Roasting tomatoes concentrates the flavor wonderfully. They will be eaten almost as fast as you can let them cool down a little.
