Ok foodies, who among you takes part in this old-timey way of using bacon grease to cook in?

I buy really good bacon, and it's just a shame everytime I fill a can of bacon grease and throw it away. I just ordered a grease can with strainer and I'm going to start cooking with it. I've heard all the stories of imported olive oil being adulterated with cheaper oils, and it's one other expense.

So, it's "eveything's better with bacon" taken to the max for me!

I have one of those thingies for bacon grease and I always save the bacon grease from our yummy thick sliced bacon.

I don't cook bacon all that often, and I don't use the grease all that often, but when I need it I have it - and I use it!

It's so delicious in cabbage, or any sort of beans, or collard or turnip greens - YUM! A little dab of bacon grease cooked into just about any fresh veggies makes them even more delicious - and it doesn't have to be much to get that distinct flavor.

Oh, also, when I bake cornbread, I melt a little bacon grease in the bottom of the iron skillet and get it really hot before I pour the batter in and bake it. Wow, the tender crispness of the crust is amazing!

I'll use bacon grease for some things, e.g. cornbread, sometimes green beans or sliced veggies for a different taste, occasionally to braise. But for most things it's olive oil or butter.

I roll oats, bread crusts, whatever in it and put it out for the birdies....esp in Winter when they need
fat for energy so much.
Also, I roll chicken jerky dog treats in it, a little.

Also if I feel really bad for any racoons or foxes in a harsh winter...I roll dog food in it and place it
down by the creek 3 short blocks away.
It's gone next day... when I walk the dogs.

I don't eat bacon but my son does. I also dip bread in the grease and toss it to the birds and critters. It disappears immediately.

I use bacon grease when I cook hash brown potatoes. I put some in the pan, then the hash browns and I put pats of the grease on the top of the potatoes. When the grease on top starts to melt, the bottom is nice and brown and then I flip them over and let the other side brown. I also put chopped dried onions mixed in the spuds . Very tasty.
