I generally don't sweat it on trying to predict individual kitchen sanitation, myself, although if I have personally observed someone to engage in pretty gross hygiene practices at work, I'm probably gonna skip their casserole, but try to do so as politely as possible. Generally, though, I don't really worry about this.
Never been to a pot luck dinner or lunch because most of time I already know what's being served. Though there might be a dessert or side dish that someone else brings that no one knows about. It's also not common in my group of family and friends.
I used to love them at my work...the food was so good...we had two people though that if they knew you had a dog, they wouldn't eat your food...more for everybody else...
Potluck dinners should be separated into two groups - pet owners on one side and the rest on the other side.
Used to love them back in D.C.. My staff was very diverse and we had at least 15 different dishes out. We did it once a month and we always looked forward to it. Mmmm.. Mercella's Jamaican jerk chicken....
Love potlucks. Don't worry myself one whit about the sanitary conditions in others' kitchens, just how good their cooking is, and I've made it to 65 just fine with that attitude!

Considering that I've worked a in professions that involve dealing fairly regularly with childrens' bodily fluids of all varieties, concerning myself with whether or not the coworker who baked a cake also owns a dog is pretty small potatoes.
When I worked in an office our potlucks were planned months in advance and we had one every other month, it was wonderful.
Not everyone was a cook or a baker so they usually brought the chips, pop, cups, etc
Everyone who was a cook or a baker listed the dish they were going to bring so we never had any duplicate dishes.
