Bacon and egg whites for me for a very early dinner ... I had my second eye surgery today (cataracts, at my young age, ha! ) -- got home just past noon feeling nauseated and light-headed, I think from both the anesthesia (although that didn't happen last time) and from not eating or drinking anything (not even water, which was the hardest thing) since about 8 p.m. the night before. I ate a banana and took a nap ... felt much better when I woke up (3 hours later ) and also very hungry. Didn't feel like "cooking" a real dinner so just nuked some bacon and scrambled some egg whites.

I love bacon but only have it once or twice a month. It was yummy.

I sauteed onion, mushrooms, zucchini, and summer squash. Then I made rice with chicken broth, parsley and garlic. Mixed the rice into the veggies and added freshly grated parmesan, spooned into a casserole dish and topped with grated sharp cheddar. It is baking now and smells awesome.

They only had marinated pork tenderloins so I ended up getting rotisserie chicken instead. I hate pre-marinated meats.

Sauteed chard and kale mix with white beans and garlic served over cavatapi pasta.
