It was really good! We hadn't had it in years either. I forgot how good the eggplant, meat, onions and sauce tasted with cinnamon, nutmeg and other herbs... The 4 of us ate almost half a casserole! Yowzers!

Leftovers: Boneless chicken breast sautéed in tarragon butter, steamed asparagus, boiled potatoes and a great béarnaise sauce to mop it all up.

Chicken soup. I cooked the chicken last evening and spent half the day fussing with it. I just can't make soup quickly.

Monday: DS has Dr appt today, which will be several hours long, so I'm making a huge pot of New England Clam Chowder with warm crusty bread for dipping. Left over birthday cake (lemon) for dessert.

Clam chowder sounds great on a day like today, well any day really. Good luck to your DS.

Tonight, because of that thread about Italian food, I am making brainchild (got to love autocorrect). BRACIOLA it was supposed to read. I haven't decided yet if I want a pasta or rice with it. I love sauce/gravy with rice. Leftover salad on the side.
