Blizzard conditions right now and 3 feet of snow is expected by Tuesday afternoon. I am not too sure what I want for dinner but hubby is having a chicken dish, with shrimp, artichoke hearts, spinach and roasted potatoes that we got from a local Italian place. I froze it last week and took it out to heat up for him. I am actually stressing over having to dig out from this storm and food is not on my mind which is odd for me.
Hope you are staying warm; at least it wasn't quite as bad as they predicted. And here, we have had no winter to speak of; 70 degrees today. We are expecting a slight chance of snow or sleet this weekend.
I am torn right now. Maybe we're having chicken enchiladas, or maybe we're having pork chops and acorn squash. I'm tending towards Mexican, but not sure.
Tonight will be spaghetti with meat sauce.....(I made the sauce yesterday).
I always used to pour the sauce right over the pan of drained spaghetti and save just a little sauce to spoon on each plate. Then I got into serving the plain spaghetti and ladling the sauce over it on the plate....and then the person eating it had to mix it at the table.
I think the old way was the right way....and the idea of a plate of white spaghetti with sauce over it....was a result of advertisement pictures by spaghetti companies.....nothing to do with how it should be served. Going back to the old way.
I am thinking Mexican as well. Red mole chicken with some yellow saffron rice. Will mix in chopped veggies in the rice. If I remember, will stop by and get some avocados to make a salad.
Spinach salads and assorted fruits/vegetables (wally world 44 cent oranges, and frozen stir frys)
I actually like all these so this diet albeit repetitive is actually tolerable to me. Plan on eating really clean after plenty of indulging over the holidays. My metabolism is high enough that only minor damage was done.
Having another couple over for dinner tonight:
Pan-roasted lobster with garlic noodles, tropical fruit coleslaw, crusty Italian rolls and lemon drop martinis.
