On the stove top a red and yellow lentil soup is cooking and we will have chapatis,homemade yogurt and lime pickle with it. For dessert a Punjabi chai tea and 1 Laddu.
Was going to make taiwainese marinated minced pork with soy stewed eggs BUT oldest caught a gastreo virus from the youngest. And it's her most favorite dish so I am not "allowed" to make it. lol
So instead I am going to experiment. I found a really strange hairy root vegetable called nagaimo and I am going to make something with it. I am also making kimchi for the month with only the youngest so I will be busy today cooking and banishing oldest to the one side of the house FAR away from the kitchen.
We're having kind of an odd combo tonight: rib eye steak paninis (with Havarti and sliced tomatoes) , collards with cornbread croutons, a bottle of Malbec, and cherry cheesecake for dessert.
Although I love a chicken burrito from my favorite Mexican restaurant, I am going to do my best to replicate the flavors I enjoy so much by doing it at home.
I have a chicken breast (that will be shredded) in the Crockpot right now with a variety of seasonings to stuff into a flour tortilla. The burrito will also be stuffed with refried beans, rice and topped with sour cream and home-made Pico de Gallo. To be served with a side of Jalapeño peppers for any additional heat that I may want.
