Since I have to do food shopping tonight, I'm having a craving for a chili dog with the works and a root beer float from A&W.

Tonight we have eggs in Dijon mustard sauce with boiled potatoes,a glass of water and for dessert another Bartlett pear.

Chicken in curry with pineapple, Basmati, mixed green lettuce, mini almond cookies/spicy nuts/apple wedges.

My husband left for Long Island this morning for work. Hopefully he will be back by Friday. This means I will make a favourite of my kids. It will be sweet Italian sausages with Granny Smith apples and pasta with a butter garlic sauce.

Was going to make a big pot of chili but the sun is out and that feels a little heavy for today so maybe grilled chicken breasts with rice and a green salad to go with.

Here's the plan for tonight ... I've got some boneless chicken breasts marinating in Italian dressing. Will sear off on both sides tonight and place in a baking dish. Will saute some mushrooms in the same pan and pour over the chicken. Will wilt a bunch of spinach in some chicken broth and pour over the chicken and mushrooms. Will lay Mozzarella cheese over everything and bake until the chicken finishes cooking. Not sure of a side yet. Maybe some chicken Rice-A-Roni.

Chicken poppy seed casserole. Maybe a salad and broccoli to go with it.

I'm cooking Mexican spicy chorizo sausage for the first time and no recipes online looked good, so I came up with one in my head.

Going to try fried ground chorizo with fried onions and peppers, all mixed into some couscous blended with a few herbs from the garden. Probably a side of steamed broccoli, and fresh mango for dessert.

I am thawing a pan of Chicken Enchiladas, so I'll have a easy dinner without making a mess in the kitchen.
I think I'll give the kitchen a radical scrub down, like polishing the table, seasoning the butcher block and polishing the quartz. Then I'll get to look at pristine, until tomorrow when I'll mess it up again.

Ya know what? I think I might make a beef and bean burrito casserole tonight. I've been racking my brain for ideas.

I doubt I'll be doing all of that kitchen scrubbing, although I have done laundry today...does that count?
