If I have my way, clams steamed in white wine and butter, corn on the cob, garlic bread. Depends on if the store has fresh clams. *keeping fingers crossed*
Unstuffed peppers tonight in the crock pot, served with mashed potatoes. The girls are going to the OU game Saturday then onto Eureka Springs so they've asked me to make these tonight.
My mom's retirement started this week and I'm making her a special dinner tonight since she will be gone for the long weekend:

A strained nonfat coconut Greek yogurt parfait with dark chocolate & honey roasted almonds, an homemade pizza made with pita bread, ketchup, oregano and Emek (yellow) cheese and a mug hot chocolate made with fat free milk.
Broccoli and mushroom quesadillas with homemade salsa, and slaw. And a huge slice of red velvet cake from Albertsons.
