Since I didn't get to prepare my Fat Tuesday dinner yesterday, tonight's dinner will be a nod towards my New Orleans roots:
Creole-spiced flounder with tomatoes
Red beans and rice with Andouille sausage
Collard greens with mushrooms and bacon
Scallion/jalapeno corn bread
Banana foster sundaes and baked cinnamon-sugar banana donut holes for dessert.
My husband is supposed to make the Hurricanes.
I'm coming over That sounds delicious.

Last night - nachos. Tonight - roasted chicken, mashed potatoes & gravy, and spring vegetables. I had a little fried chicken liver & onions prior, since my chicken had more than its fair share of livers! Gave most of the liver to my in-laws. FIL was thrilled.
Barbecued sausage slices on a bed of sauteed cabbage and a side of steamed rice.
