Tonight's dinner will be creamy shrimp enchiladas (full of shrimp, cilantro and spicy salsa) topped with a creamy cheese sauce; corn and tomato salad, purple cabbage slaw and frozen mango margaritas.
Even though my kitchen is bifucated right now (half upstairs in the old kitchen, half downstairs in the new) I couldn't stand another night of take-out. I'm roasting some chicken thighs with herbs & garlic in the oven upstairs, and then I'll saute spinach on the new induction burners downstairs and take them for a test drive.

Have beef BBQing in backyard~ with do beans and cole slaw with it. Maybe a little leftover mac and cheese from last night!
