I've got a link of beef sausage thawed out and a sack of fresh summer squash with a tad of okra. Looks like a pot of a wild gumbo I the making with a can of diced tomatoes and some onion mixed in.
Pork tenderloin medallions over rice with a basil, red curry & coconut milk sauce, probably some yellow squash & onion thrown in there and I think I've got a bit of poblano to add as well.
I made up a Mexican Pasta salad with stuff I had on hand - very easy and "hot day friendly"
1 box tri color rotini
2 cups broccoli and cauliflower florets, chilled.
1/2 cup sliced black olives
1/2 cup Spanish olives
1 cup lettuce shredded and diced - I used plain old iceberg for the crunch factor
2 two large diced tomatoes.
1 cup shredded extra sharp cheese
1 diced avocado.
diced red, green and yellow peppers
diced carrots and celery.
Lime and avocado and herb dressing. Sitting on the screened porch waiting for it to chill a little more.
Tonight I made the kids ham steak, homemade mac and cheese and I pulled a jar of applesauce I canned last fall out of the pantry to go with. I wasn't feeling it so I had half an egg salad sandwich on swirl rye and marble bread. Strawberry milk for all of us to drink.
I haven't been posting much lately; busy schedule, and grab & munch dinners, for the most part. Tonight, DH wanted subs, and so he picked them up for us. Nom.
Steamed lobster tail with clarified butter and a salad. Unsweetened iced tea to drink.
Now that sounds good!
Just a burger and fries for me as I've have be up at 4 for a six hour round trip to Burlington Vermont tomorrow for work. And then work there for like 6 hours.
