Recently I've become bourgie and I eat out a lot. I see stuff like Oysters, Shrimp, Lobsters, Clams, Crawfish, Scallops, Squid, Crabs, etc. I feel like I'm not quite a foodie if I'm not able to eat these things. Any time I go out for sushi I can't get busy like I'd want.
Should I just accept this? Or is there a new invention I've overlooked?
If you have an allergy to seafood or shell fish i doubt there is a machine /invention that will negate that allergy.Best bet is to just avoid those products or those restaurants that focus on those products.
Or if its merely a dislike of seafood you can try to slowly change your perspective on the product by trying a little of this or that from your partners plate, might be nothing more than developing the acquired taste for the product.

Have you heard about the theory about parasites? Multiple allergies and all the other autoimmune disorders have been doubling in incidence every generation since we eradicated the common gut parasites like roundworm, hookworm and tapeworm in the USA. The idea is that with nothing serious for the immune system to work on, it's more likely to attack the harmless cells in your own body, or something else that poses no threat, like the shrimp you ate tonight. I heard a guy interviewed on NPR who said he had completely crippling levels of food and environmental allergies until he arranged to get roundworm, by walking barefoot on the ground within 6 feet of where someone or something had left a roundworm-infested poop deposit. He succeeded in getting roundworm and ALL his allergies are supposedly gone now.
Haven't heard of any cure, but fwiw, a good friend of mine had shellfish/seafood allergies until last year. It was bad enough that if we were having a cookout and he was a guest, I'd have to clean the grill if we cooked shrimp before putting any other food on it to cook.
Then suddenly last year he found (by accident) he was no longer having reactions to it. He cannot explain why, nor can his doctor.
So there is that hope.
