What cultures food are you interested in trying out?

There's an Indian restaurant about an hour away that my daughter and her husband go to frequently, and they rave about it. I've never tasted Indian food and I'd really like to try it.
Indian food encompasses several regions and hundreds of different dishes. I have been seeking out and sampling Indian food for years, and still have many recipes to try. It's a varied and very sophisticated cuisine.
I love the idea of trying new cuisines but really I'm too picky and have way too sensitive of a stomach to face trying some of the real authentic food in third world countries in particular. However I'm always open to a good, authentic reputable ethnic restaurant. I love Middle Eastern food and I'd love to try more regional variations of it, especially Moroccan. Never tried African or Ethiopian, curious in theory but not sure it'd be my cup of tea, I don't like overly heavy, spicy cuisines. Would love to try real Thai, Indonesian, Himalayan. Also Jamaican, South Pacific, Peruvian, various 'island' cuisines. Oh, and authentic Asian food, Shanghai, Hong Kong, especially street food.
I'm not a big fan of heavy greasy meat-based foods, which tends to eliminate many authentic ethnic cuisines. Even travelling in Europe, I was surprised at how heavy and fatty all the meat dishes were, and ended up living on pasta, pizza, and various bread and cheese for most of the trip. Seafood and even chicken was surprisingly not nearly as ubiquitous as here and expensive, even in Italy and Spain; mainly it was various forms of beef and pork.

My newest neighbors are from Uzbekistan. I'm not familiar with the cuisine, but it sure smells good!
My family is Russian, so I've had some exposure to Uzbek and Georgian food, though not much unfortunately. It's excellent - very flavorful, if you like Mediterranean, Greek, and Middle Eastern food, you'll like it. The real Uzbek plov (rice pilaf) is a real art form.
Sounds right up my alley. My family hails from Siberia, which is meat, meat, and more meat, stuffed with meat, but I like lighter, flavorful foods.

I'm down with anything that doesn't involve organ meats or insects.
Same here.
I love trying different foods from other cultures and countries.
However, that does not extend to organ/exotic meats and food stuffs, and especially insects and creepy, slimy crawlies. No offense but not my style.
I'd like to try more Eastern European foods like from Russia.
