I had totally forgotten about tarragon. There may be others but that is one herb/spice that comes to mind.

I love tarragon in a seafood sauce.
I love curry in chicken salad.
I adore cardamom in sweet pastries.

Here's the base recipe. The most moist, flavorful, WOW meatloaf I've ever had or made. This recipe made me love meatloaf again AND this is the first time I ever had oatmeal in it. When I say moist- I MEAN MOIST! Of course cooking in a dutch oven helps to seal it all, but it was so moist I had to crack the dutch open and boil off some of it, lol. It was unbelievable and I have 12 Boy Scouts that will attest to that.

1 1/2 pounds lean ground beef
1 egg beaten
1 cup uncooked oatmeal
1 14.5 ounce can diced tomatoes
1 large (or 2 small) green peppers diced
1 large onion diced
10 cloves garlic finely diced
Montreal Steak Spice to taste
1 tbsp thyme
1 tbsp oregano
Sweet Baby Ray's BBQ Sauce

For me the one spice I have come to really appreciate (blend actually) is chinese 5 spice. I use it a lot on wild duck.
Holy God. 10 cloves of garlic? No.

I looove Old Bay! I was putting it on everything, until the Mr. threw a fit and declared that he was sick of everything tasting like Maryland. Utz makes a potato chip flavor with that seasoning (it's called "crab seasoned" or something like that), and they're horrifyingly delicious.

Dill. Have never cared for the taste of it much until within the last couple of years or so. I still don't exactly put it on everything, but I do like it better.

Cinnamon & nutmeg.....
Adding either of those makes some of my favorite recipes just explode w/ flavor, but in a subtle way.
This is my next experiment....I'll probably adjust the cinnamon in it.
Sounds amazing

Toasted sesame seed oil has been a great boon for my kitchen! I love how it enhances the flavor profile of many dishes, a little goes a long way too.

I also love Harissa, yum!

Smoked sea salt is amazing also.

I love Old Bay!! I put it in my Bloody Mary's.

Actually I think I love all the other seasonings that have been mentioned in this thread lol. Maybe that is why an entire large cabinet in my kitchen is just for spices/herbs/seasonings/salts etc...

I really don't like meatloaf, probably because my mother would make the worst meatloaf on earth. I will say as I am older, I do make it on occasion and it can be good. Your rendition looks excellent and perfect for a day camping or hiking

I also love the spices you used but I am a little perplexed with the oatmeal, that sounds like quite a bit??

Another flavor I like in a recipe....is maple syrup......
On it's own, I'm not a fan....

But in oatmeal, with chopped apples & golden raisins it's superb.
And this dish.....is a longtime favorite.
The syrup is the secret.
