Today I had a sandwich. I haven’t had more than one sandwich at home in a year, as part of my low carb eating plan. But today I had some hard boiled eggs, and I made myself an old fashioned egg salad sandwich on thin sliced whole wheat bread, with spinach leaves and a slice of cheddar. It was wonderful, and I relished every bite. The bit of smoked paprika added a pleasant extra to the egg salad.
I finished with one of those cute miniature tangerines.
