My girlfriend bought me a Traeger for Christmas. I've never had a smoker or cooked ribs.
I smoked two racks of baby backs yesterday. The meat turned out excellent. I seasoned then ran them for about 2.5 hours uncovered, spraying twice with apple juice. Wrapped them in aluminum foil with butter, brown sugar, and a little of BBQ sauce. Another two hours or so. Got them out and sauced them, back on for another 45 minutes.
The flavor was fantastic. Meat was tender but more competition style and not falling off the bone.
I smoked a couple of baked potatoes for two hours, but they needed far more time on the smoker. Had to finish those off in the microwave.
I think the cold impacted the cook.
We also had a salad. I'll be eating those leftovers for lunch today.
A prosciutto, dry salami with veggie sandwich on Ezekiel bread with potato salad and a bag of Ruffles potato chips.
