Boy, does this bring back memories.

When we hosted Thanksgiving/Christmas dinner at our place, I always made a very plain and simple rice-spinach dish for my FIL. He wasn't that fond of heasvily-spiced foods, so that rice was right up his alley. I can still see him holding the serving dish and peering over his glasses to quietly scoop a second helping.

He's no longer with us but, for holiday dinners, I always prepare that dish. And we all remember how he loved it!

I'm not much of a thumper, but I never tiptoed around the kitchen either while making a souffle, and they always turned out the way I wanted. The only problem I ever had while making a souffle was once while using an electric oven. Because of the heating element in the ceiling of the oven, the souffle didn't rise as much as they did in a gas oven. It was still tasty, and I was the only one who knew there was anything wrong (so I shut up about it). I used the recipe in the late 1970s trade paperback copy of Joy of Cooking, and souffles came out right every time except that once.

My own favorite dish for special occasions is ravioli or tortelloni. I use Giuliano Bugialli's method for making my own pasta, and the filling is usually a mixture of spinach, ricotta, Parmigiano-Reggiano, nutmeg, and S&P. Or else I make Marcella Hazan's Lasagne Bolognese.

I don't not make anything but I don't make anything often so we have a large variety of combinations and foods that are made when I feel like making them. About the only constant is applesauce, cottage cheese and tomatoes, other than that it is whatever whenever.

Now I recall my 'crepe phase' -- late 80's. Made them at least weekly (the kids loved them). Anyone else remember when EVERYONE was serving fondue for casual dinner parties?

Now that you mention it, I do! My parents did have frequent fondue parties.

We break out the Raclette grill and fondue pot. I didn't experience the previous fondue craze, so it's not considered "dated" in our circle. I think the Raclette grill is the current replacement for the fondue pot.
