Mixed greens, with toppings and dressing packed separately. Mix when I arrive.

Mixed greens, tomatoes, cucumbers with containers of diced purple onion, avacadoes, artichoke hearts, black olives, bacon pieces and croutons. Mix up a yummy bottle of vinaigrette and you are good to go!

If it's spring or summer I bring (separately to be mixed prior to serving)

Baby spinach leaves
Blanched /toasted almonds
Sliced strawberries
Mandarin orange slices
Chow mein noodles

Raspberry vinaigrette

Always a hit.

^^^ This sounds great. It has sweetness and crunch.

OP I'd either omit or put in separate containers any meat items (so vegetarians/vegans and health nuts have a go-to dish) or anything that browns when exposed to air for too long (avocado, apple). And while I personally love dandelion greens and arugula, many people find them too bitter or too strong so I'd leave those out too. I don't think you can go wrong with green leaf or Romaine lettuce as your base. Everyone loves croutons too.
