just stuck a huge pork should in the crack pot. It would barely fit our 6 qt pot. Dinner will be pulled pork sandwiches and potato salad. What I will do with the rest of the meat I have no idea, thank God for freezers. I also have 8 chicken quarters in the oven. Spoiled brat and I went shopping yesterday. They quarters were on sale at our Box plus 10% store you .41 a lb. I asked him to grab a package. Little did I realize they were frozen together. Thus I had to either freeze them that way or cook part of them after they had thawed enough to separate. That is what I did.

It is cold and any moment it will start to rain...

Tonight pancake soup https://www.carolinescooking.com/german-pancake-soup/
and for dessert apple/banana casserole and a glass of milk.

Apple and banana casserole....
100 gram soft butter well mixed
3 to 4 small buns ripped in small pieces and soaked in milk and after they are soft squeeze just a bit the extra milk out
4 to 5 beaten eggs
6 to 7 peeled and diced Cortland or Macintosh apples OR 6 apples and 1 sliced banana
125 gram sugar
pinch of cinnamon
juice and rind of 1 lime or lemon ( more aromatic with a lime)

Hand mix everything well and put in a buttered casserole dish and bake for roughly an hour in 350 F oven.

A little Dive of a Café up near the TN KY state line. I know the location but have forgotten the name. Stopped at the gift store last earlier in the week and an inspection is due. Real fried chicken and all the trimmings is what is hoped for.

Leftovers from the chicken noodle stir-fry with the leftover satay sauce. It made a ton!

Do you use cedar planks on the grill or direct salmon to grill grates ?

Also curious how you are preparing / season the salmon ? Spices ? sauces ? marinade ?

I use the direct to the grill method. Seasoning is simple: black pepper & olive oil. I buy salmon with the skin on (keeps the fillets from falling apart on the grill.) Grill skin side down for about 10 minutes. Add fresh squeezed lemon juice before serving. Serve with a Widmer Hefeweizen! Healthy and simple.
