After I saw 'Leek' mentioned in Alm's post...a lightbulb went on very brightly over my head.
Mon Dieu! it's been ages since we have made Vichyssoise.
Just got back from the Farmers Market, got some chives, and some lovely Leeks that won't require a whole lot of cleaning, not at all sandy...have some potatoes, onions, cream, and chicken stock on hand... We are making the served hot version.
got a nice fresh Baguette from the Farmers Market.

I love potato leek soup! Although I call my version "Irish," I doubt it's much different than yours.
I like to add italian parsley to mine at the end, as well as chives or green onions as garnish.
When I went shopping yesterday I planned on making some kind of chicken and sides. Then I woke up this morning and realized it is OPENING DAY!! The game is at 4 and I can't be stuck in the kitchen.
Instead I will push up Friday's dinner of fish tacos to today. This is something my husband makes. He, hopefully, will be ok with cooking while listening to the game. He's not as much as a freak about The Red Sox as I am!
So it will be cod tacos with cabbage, an awesome white spicy sauce he makes and sliced avocados. And GO SOX!!!
The Dodgers start at 6pm here so I am just speeding dinner up by about 1/2 hour. We are going to have stir fry which is super easy and quick, snow peas, again easy and quick and home made egg rolls which I took out of the freezer about an hour ago, just have to heat them in the toaster oven or air fryer. The clean up is what I am not going to like. It will interfere with the game. We don't get to see them play very often.
After work picking up all my meat for Sundays Easter dinner at a local butcher, then to the grocery store for a few more items. I has planned on Roasted bone in Thighs for DH and I think I'll make cheesey grits as a side. I'll just eat the grits.
