It's a KISS night so I'm making some bean dip with tortilla chips and wedges of tomato.

Last night ended up making the bulgogi meat, on top of spinach/kale/chard, mango, mushroom, avocado, red cabbage, topped with a fried egg, cilantro and spicy peanut sauce.

DH really like it, but alas, there was no more....

Filled in with some raw carrots and cauliflower and homemade spinach dip.

Grey and windy! I am calling it movie night with short pasta with cream, smoked ham, lots of fresh garden herbs, white wine and garlic.

Tonight we are having sweet and spicy bacon-wrapped chicken thighs with Italian roasted potatoes, roasted Parmesan broccoli and carrot cupcakes for dessert.

I've got to work tonight (from home) so I am putting my tiny corned beef in the crock pot. I've got marble rye bread, horseradish, and mustard to go with it. Also bought a package of cheater tri-color cole slaw, but I will make a dressing of mayo with a bit of sugar and vinegar.

"Day-old" cream cheese topped brownies for dessert from the bargain cart. DH will probably ask me to work at night more often.

IF the pork loin defrosts in time: pan fried chops and will make a sauce of apricot preserves, smoked chili, pecans and medjool dates. Not sure on the side, was thinking kobacha squash but that might make the overall menu too sweet, so probably sauteed chinese pea pods, and maybe an apple / fennel salad.

If it doesn't defrost.... left overs?


Edited: Never defrosted. Having a lite keilbasa and red cabbage / crispy capers / caraway and balsamic glaze

Left over Stuffed Cabbages and mashed potatoes..

but y'all talking about Chicken Livers has me worked up.

I just dug out my parents 3X5 index card recipe for Chicken Liver Pâte with diced red Bell Pepper and Bacon.gonna make some as an Appy for Easter Brunch,

Also got a family member request for 'Hawai'ian Meatballs' from the old Fanny Farmer or Joy of Cooking cook books..gotta check which one has it.

Back 'in the day' any recipe with pineapple was given the added sobriquet ; 'Hawai'ian
Tiny pork/beef meatballs in a sweet and sour pineapple green pepper sauce.

Will make some of those for Easter brunch too.
