Last night was all Greek to me. Homemade pita, meatballs, tzatziki and spanakopita. There would have been more, but we lost our water for over 3 hours.
Tonight is the first night of our 4 day anniversary celebration. We are starting it with 15 for dinner tonight. i did purchase the chicken and will pick it up this afternoon. I have made a few dips, are doing crab cakes and 3 salads. The macaroni salad I made yesterday; will do the fruit salad this morning and the spinach salad I will get everything ready but not assemble it until just before dinner. One of the out of town guests is celebrating her bd today. so we will have a cake for her. I will add one thing, none of the guests are staying with us. Some are staying with our daughter and others are staying at vacation rental properties.
We had a very cool night and it is such a lovely morning. Cannot decide what to cook for today.Either roasted chicken with baked seasoned potato wedges,garlic buttered green and yellow beans or spaghetti with baby meatballs in a lovely homemade tomato sauce,served with a mixed garden salad.I guess I will flip the coin.
For dessert fresh fruit salad with little meringue drops and a shot of Grand Marnier.
Another early dinner as I've been up since 4:40 a.m. ... but this one wasn't great.
Those are chicken wings, cooked on the stovetop for the first time (usually I bake them, then add sauce). I marinated them in Thai sweet chili sauce (one of my favorite sauces), then cooked them on the stovetop for about half an hour while the veggies were cooking.
Oh karen, your mixtures always look so appetizing!
Tonight we're just going to fill up on fried eggplant, a rare once-a-year splurge, and have ice cream and nectarines for dessert.
